CBD Infused Morning Muffins
These delicious and easy to make morning muffins are infused with CBD and are high in Vitamin A; what better way to start your day!? The anxiety calming properties of CBD will ensure that your day starts off gently, allowing you to crush your to-do list.
If you would rather start your day with THC infused muffins, you can easily substitute a portion of the vegetable oil for a cannabis infused oil. You can find our recipe for cannabis infused coconut oil HERE.
These muffins will stay fresh in an air-tight container for a few days on the counter or in the fridge. If you are going to keep them for longer, we recommend storing them in the freezer.
Ingredients
- 1 egg
- 2 Tbsp vegetable oil
- CBD You Tincture (purchase HERE)
- 1/2 cup milk
- 2/3 cup brown sugar (or granulated monk fruit)
- 1 tsp vanilla
- 1 3/4 cup whole wheat flour
- 1/4 cup flaxmeal
- 2 tsp baking powder
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1 cup diced, peeled apple
- 1/2 cup each grated carrot and zucchini
Directions
- In a large bowl, beat egg lightly. Add oil, CBD You Tincture, milk, vanilla, and brown sugar; mix well.
- In another bowl, mix the flour, flaxmeal, baking powder, salt, cinnamon, and nutmeg. Add to egg mixture and stir until combined.
- Stir in the apples, zucchini and carrots.
- Spoon into 10 greased or paper-lined muffins tins, filling almost to the top.
- Bake at 400’F for 18-20 minutes, or until firm to touch.
