Cannabis Infused Energy Balls
These delicious, keto-friendly energy balls are the perfect on-the-go snack. With a cannabis infused chocolate drizzle, they are easy to dose for any tolerance level.
We use cannabis infused coconut oil in this recipe, so be sure to make a batch ahead of time. You can find the recipe HERE. Ensure that you have tested your batch’s potency before using it in the recipe so you can accurately dose each one.
If you prefer these to have a CBD drizzle, instead of THC, you can use a regular coconut oil when melting the chocolate and then add in your favorite CBD tincture. We love CBDMove (found HERE) or CBD You’s tincture (found HERE) for baking!
You can store these babies in the fridge for up to three weeks in an airtight container!
Ingredients
- 1 cup sliced almonds
- 1/4 cup pumpkin seeds
- 1 tablespoon sesame seeds
- 2 tablespoon ground flax
- 1/4 cup shredded coconut , unsweetened
- 1/4 teaspoon sea salt
- 1/4 cup sugar free chocolate chips or dark chocolate chips
- 1/2 cup unsalted peanut butter
- 1/4 cup sugar free maple flavored syrup or liquid sweetener of choice
- 1/4 cup sugar free chocolate chips
- 1/2 teaspoon cannabis infused coconut oil
Directions
- Place all of the dry ingredients in a large mixing bowl.
- Add the peanut butter and maple syrup to a small microwave safe bowl. Microwave for 30 seconds; do not overheat.
- Pour the peanut butter and maple syrup onto the dry ingredients, combine using a spatula until it forms a sticky batter that you can easily shape into energy balls.
- Roll golf ball sized balls and place onto a parchment covered tray or plate. You should end up with 12 or so.
- Place the energy balls in the fridge for 10 minutes to solidify.
- Meanwhile, melt the chocolate chips with cannabis infused coconut oil.
- Drizzle melted chocolate on top of each energy ball.
- Place the plate in the freezer again for 10 minutes to set the chocolate drizzle.
